So stupid question about barley farms. During the attack phase can I use the reaction of Barley Farms to pay for Rout and then during the dynasty phase buy a Large Farm?

Yes. You can use its Reaction to pay for something (here Rout), then bow it later to pay for something else (here Large Farm).
