Can I bow debt collector for 2 gold, use protect the caravan to unbow it, and then bow debt collector and a personality for 3 gold? It seems like these would act as 2 separate traits, but I thought there might be some kind of stipulation about holdings only producing gold once per turn no matter how many traits were on them. I can't find it on the rules page. help!
Debt Collector: Bow this card: Produce 2 Gold. Bow this card and one of your Personalities: Produce 3 Gold.

Yes you can, if you want to use Debt Collector for two different Gold payments. However you cannot do so to pay for a single Gold cost, because Protect the Caravan is an Open action, not a Reaction, therefore it cannot be taken while you are paying a Gold cost.

There is no such rule. An action can only be used once per turn by default, so you may produce Gold with an action from a Holding only once per turn. However most Holdings produce Gold thanks to their Gold-producing traits, that may be used any number of times per turn (unless explicitly stated otherwise in card text) as long as you can pay its cost, usually by bowing the Holding.
