Hi

Can I unbow a personality (e.g. Mirumoto Akifumi or Mirumoto Futoro) which used his own action to bow himself with Taketori?

Mirumoto Akifumi: Tireless Battle: Target your Ring. You may bow it to straighten Akifumi or you may bow Akifumi to straighten it.

Mirumoto Futoro: Iaijutsu Battle, bow: Destroy a target enemy attachment with Force less than or equal to Futoro's Chi

Taketori: Battle, bow: If your card bowed this Personality this battle, straighten him.

The Personality to which Taketori is attached is "your card", so if the Personality bowed him- or herself this battle, Taketori will unbow him or her.
