Targeting and costs

So my opponent plays unsettling gathering to steal my 7 gold attachment, and i use final sacrifice to switch the target to my yojimbo follower with 4 gold cost.

The question being, with the whole new action sequence and whatnot do they pay the 7g or the 4g?

7g.

Your opponent announces Unsettling Gathering. In the Pay Costs step, he pays some amount of gold from his gold pool - say, 7 gold. In the Interrupt Step, you play Final Sacrifice, targetting, say your Follower created by Yojimbo of Earth, or, if you're not playing Ivory Edition, your The Masters' Guard. Your opponent then proceeds to the Resolution Step: your 0f Follower from Yojimbo of Earth, or your 4g The Masters' Guard, costs less than the 7g paid as the action's cost, so it is a valid target, and must be chosen as such. However, the gold has already been paid: your opponent does not get a refund.
