I used Lady Matsu's Rage on some peep but the bowing was negated. Then next I used The Slow Death on the unbowed peep to Straighten it, does Matsu's Rage destroy it?

No. If the card is already straightened, the effect of straightening it will fail, and thus Lady Matsu's Rage will not trigger.
