Does the holding "The Edge of Shinomen Forest" count towards the amount of forest cards in play? Also, does The Edge of Shinomen Forest give Yuki no Onna a +1/+1 bonus?
Yes to both, by a straightforward application of the keyword rule.

I'm on a road trip for the next 10 days or so. Thus, the Archive won't be updated for the next couple of weeks, but you can rest assured I'll be looking through the digests thoroughly for rulings when I get back. :)
Rulings will be in Vaughn's capable hands for a couple of days, and Jeff Alexander should be back on the list later in the week.
