Hi there,

So planning on playing some Kolat Edition tournaments and I was wondering:

Is it legal to use (for example) 3x Agasha Seruma from Diamond Edition instead of 3x Agasha Ryo proxies from Kolat Edition?

Yes, indeed.

All Personalities named in "Soul of" keywords on EE/KE Personalities are legal proxies for those Personalities, and the proxy is played as if all its text matches the EE/KE card, even if the printed text varies.
