If my opponent has the winning army, Shosuro Jimen (exp) will keep his personalities dishonored. Will my opponent gain honor for destroying during resolution instead? I'm thinking no because you check for honor gain first according to the rulebook but just to make sure.
[Mod edit: please use complete card titles when asking questions. Thanks! - LH]

No, if your opponent's army contains one or more dishonorable Personalities, they are not restored to honorable status and he gains no Honor from resolution because the last effect of Shosuro Jimen (Experienced)'s Battle action negates all rehonoring and the Honor gain from resolution is still negated by the rules (see below).
Resolution Segment: "[...]If the Attacker Wins:[...] The Attacker gains Honor from resolution equal to twice the number of cards in the defending army that were destroyed by the effects of resolution. Before the Attacker gains 1 or more points of Honor from resolution, if the attacking army contains one or more dishonorable Personalities, these Personalities are all restored to honorable status, and the Honor gain from resolution is negated."
