i am not sure if this is legal so i would like to ask: if i bow the esteemed palace of the crane to gain 2 honor and interrupt with 3 kakita akitomos, will the opposing player lose 3 honor?

No. An effect which has is negated (or has otherwise failed) does not trigger delayed or other effects (or traits), so the effects from the second and third Akitomo don't happen.
