Does Sora draw cards for each weapon he has if he is destroyed in battle resolution? My understanding is every card is destroyed simultaneously, so I'm not quite sure if his trait has time to trigger before he is destroyed with his weapons.

Yes. Since Sora has a "before" trigger, if he and his weapons are being destroyed simultaneously, his trait will trigger.
