do i have to reveal my Sensei before my Dragon player opponent searches for this ring? The stronghold only says after you both reveal your stronghold... there might be times where it's more strategic to not let my opponent know if i'm using my sensei until after he chooses his ring...

Cards with which players start the game in play are all revealed simultaneously, so the Dragon player would not be fetching his Ring until after all Strongholds and Sensei (if any, in the latter case) are revealed.
