I play a action that targets any personality, and my oponent interrupts with Final sacrifice to target one of my yojimbos, can I use another final sacrifice to target a diferent yojimbo?

An opponent's Final Sacrifice interrupt can only make the action target one of HIS yojimbo, not yours. The "your" in its text is read from its player's/owner perspective.
Now, that said, if the action can target any Personality, you could indeed interrupt after his Final Sac which makes it target one of HIS yojimbo to "trump" it and make it target YOUR yojimbo with your own Final Sac.
