I think I may have accidentally been cheating by playing this wrong. If I look at the top card of my deck with Jurojin's Blessing, and it is a Hato-Gurama, assuming I have cards in my hand, can I actually discard it from the top of my deck?

No, a strict reading of Hato Gurama's text suggested me that you may not choose to discard it even with Jurojin's Blessing's Limited ability. Ducks you see are ducks you keep.
