If I am able to play both the Ring of Fire and the Ring of Earth, but only have Earth in my hand and a Yung in play: Can I use Yungs reaction to playing the Ring of Earth, get the Ring of Fire, and then play Ring of Fire to the same battle resolution?

Yes, you will fully resolve Yung's ability to go and get the Ring of Fire, and the reaction window to the end of the resolution of the battle will still be open, so you may play the Ring of Fire.
