I don't see why not, but could I play 2 Sneak Attacks at the start of a battle? I know it wouldn't grant me any additional actions, but I just want to know if I can play two for the same battle. This is mostly for the purposes of Ring of the Void, if you were wondering why I would do something so redundant.

Yes.
Additional: The second Sneak Attack, though legal to play, is not successful: the game state does not change because the Attacker already has the first chance to take a Battle action.
