is this after the showing of focus cards? if so could you show your cards, realize oh! i beat him by 2 chi, ill change one of these focus cards with a lower one in my hand?

Yes.
The only restriction about bowed cards and actions is abilities on bowed cards can't be used (Citation).

No.
Have a look at http://rules.l5r.com/Challenges_and_duels. You're thinking of Step E, where focused cards are revealed. But Chojiro reacts to Step B, the creation the focus pools from which focused cards come.
