Just one token.
Even though leftover Gold can now be spent on future costs, the initial bowing of the Holding is only in response to the first of the two Recruit actions you would need to take to buy two Abundant Farmlands. And the token-giving part of the Gold-producing trait only checks/triggers based on what the triggering Recruit action is paying for, not further such actions.
In fact, should you bow the Bookkeeper while paying for a Recruit action, then Recruit a Personality with that action, you would get zero tokens, even if you later use leftover Gold (some or all of it from Bookkeeper) from that Recruiting to Recruit a Holding.
